Cottage Cheese Pancakes

Ingredients

For 4 people ()

  • 3 Eggs
  • 1 cup(s) Full-Fat Cottage Cheese
  • 1 teaspoon(s) Vanilla
  • 2 tablespoon(s) Maple Syrup
  • 0.5 cup(s) Oat Flour or Gluten-Free Flour
  • 1 teaspoon(s) Baking Powder
  • 0.25 teaspoon(s) Celtic Salt
  • 0 Butter or Coconut Oil

Directions

  • Place the first 4 ingredients in a bowl and whisk.
  • In a separate bowl whisk the dry ingredients.
  • Pour the dry mixture into the wet mixture and stir until just combined.
  • Heat a large saute pan or griddle over medium heat, lightly coated with butter or oil.
  • Pour about 1 tablespoon of mixture onto the griddle for each pancake.
  • Cook for about 2 minutes on each side or until pancakes are set and golden.
