Overnight Pancakes

Ingredients

For 4 people ()

  • 2.5 cup(s) organic whole oats (get gluten-free if needed)
  • 1 cup(s) whole yogurt, kefir, buttermilk, milk or milk substitute
  • 1 cup(s) water
  • 2 tablespoon(s) maple syrup
  • 1 teaspoon(s) baking poweder - no aluminum
  • 1 teaspoon(s) baking soda - no aluminum
  • 1 teaspoon(s) ground cinnamon
  • 0.5 teaspoon(s) salt
  • 2 eggs beaten
  • 0.25 cup(s) organic butter or coconut ghee, melted

Directions

  • Grind oats into a flour.
  • In a medium bowl mix together oats, milk and cider (or juice or water).
  • Cover and leave on counter overnight.
  • Melt butter or coconut oil on skillet.
  • In the morning blend in all other ingredients.
  • Adjust batter consistency with milk or water.
  • Pour batter onto hot buttered skillet to get desired size for pancakes.
  • Cook pancakes until bubbles appear on top, flip and cook until lightly browned on both sides.
